If I convert a Rich Text box into a Links and Lists box, will I start seeing the hits on links when I run statistics?

You'll only start seeing hits on the links if you move the links from the Rich Text area of the box into individual links using the "Add New Link" function at the bottom of the Links & Lists box (or Simple Web Links box).

So you can either create a new Links & Lists box and add links to it based on what you have in your Rich Text box, or you can convert the Rich Text box you have into a Links & Lists box and then move the links from the top portion of the box (the rich text area) into individual links using the "Add New Link" function at the bottom of the box.
